IN THE VINEYARD
The grapes were sourced from high-quality vineyards in the Helderberg area. Strict vineyard management took place, including shoot and leaf thinning in mid-October, and again in early December. Meticulous canopy management was implemented to promote colour, tannin and fruit ripeness. Careful tipping of the shoots began at the end of January to build up the concentration of nutrients in the berries. Grapes were hand-harvested in late March.
IN THE CELLAR
After hand-harvesting and destemming the berries were mechanically sorted to allow only clean and healthy berries into the fermentation tank. Fermentation lasted for seven-to-12 days at 26–28°C, during which time thorough aerations took place while pumping over. Extended postfermentation maceration for up to a month ensured the extraction of ripe, round tannins and colour, before pressing. Aged in 30% new French oak barrels for 14-to-16 months.
TASTING NOTES
The palate expresses the vintage by bringing together the masculine firmness and length of the Cabernet Sauvignon with a juicy fruit core. A seamless integration of oak spice and oak tannin, entwined with the Cabernet’s masculinity, adds real depth and complexity to the wine. Drinking well ready yet promised greater integration and intrigue for up to 10 years from vintage.

This 100% Cabernet Sauvignon is best matched with seared steak, beef short rib, grilled blue cheese and Portobello mushroom.
Our delivery charges are based on the number of bottles in your order, and each case can hold 12 x 75cl bottles as shown in the table below smaller and larger bottles are pro rata. We do not have a minimum order requirement.
Subject to stock availability and successful payment authorisation, we aim to despatch your order the next working day after you place your order. Our Standard Delivery is a next day service for most of the mainland UK from date of despatch, and The Highlands and Islands areas are on a 2-3 day service normally. As most orders are delivered via our chosen courier company, we cannot offer guaranteed delivery times, however the vast majority of orders placed arrive on the next working day. During busy periods these delivery times may extend. IF YOUR ORDER IS TIME CRITICAL PLEASE RING THE OFFICE TO GET MORE UP TO DATE INFORMATION ON CURRENT DELIVERY TIME SCALES, AND WE WILL DO OUR BEST TO MEET YOUR REQUIREMENTS, BUT PLEASE NOTE WE ARE COURIER DEPENDENT ONCE THE ORDER LEAVES US, SO WE CANNOT ABSOLUTELY GUARANTEE A DELIVERY DATE.
We are able to hold your order if you would like to organise a day when you are going to be in, to do this just indicate it in the notes box provided in the delivery area of the order process. Please add any other specific delivery requirements in the same box and we will do our best to ensure they are followed, or alternatively call us on 01472 852118 and we will do our best to help you. Our chosen Couriers deliver Monday to Friday between 8.00 am & 6.00 pm.
Please note it is not possible to specify a timed delivery, without incurring additional delivery charges, if this something you require please contact us to discuss your requirements.
Please note that all our consignments normally REQUIRE A SIGNATURE on receipt. We will NOT be able to leave your order without someone taking the order in, we cannot leave your order unattended in a porch or garage etc., unless we get written confirmation from you that this is acceptable and that you will take full responsibilty if the parcel goes missing. However we are able to leave it with a neighbour or at an alternative address where they can take the goods in, please indicate this in the box for notes on the delivery page of the order process, if this is a requirement. If no-one answers the door, the address will be carded in the normal manner you should contact the courier or us to get the delivery rescheduled.
Orders under £30 in value will incur a small order £10 carriage charge to standard none surcharged UK delivery areas.
