Castello della Sala is located in the Umbria region, 18 kms from the historic city of Orvieto. The Medieval castle’s property extends over an area of 600 hectares, 200 hectares planted with vineyards at an altitude that varies between 220 and 470 meters above sea level, on the gently rolling hillsides that characterize the beautiful countryside in this area. The wine’s name honours the Monaldeschi della Cervara family, the historic owner of Castello della Sala in the XVI century.
In 1985, Renzo Cotarella, who was chief enologist at Castello della Sala at that time, made the first vintage of Cervaro della Sala, the idea being to craft a white wine able to age over time. It is one of the first Italian white wines to have malolactic fermentation and aging take place in barriques.
Castello della Sala is the perfect place for growing white varieties. The vines grow in clay and calcareous based soils, rich in fossil shells, and they are well exposed to the rising of the sun with an excellent difference of temperature between day and night. The one exception to the rule is Pinot Noir, the only red variety that has found in this area ideal growing conditions to best express its full potential.
The 2022 growing season in Orvieto began with warmer temperatures and dry conditions during both winter and spring. This year’s dry weather ensured perfectly whole, healthy berries, minimized vineyard maintenance, and produced well-balanced, healthy fruit with a good aromatic profile.
Tasting Notes
Cervaro della Sala 2022 is a light straw yellow in color with greenish hues. The nose presents slight smoky notes of
cedar and flint, followed by floral hints of Spanish broom and mimosa blossoms. The palate is vibrant, fresh
characterized by notes of vanilla, lemon butter and small pastries. Cervaro della Sala has outstanding aging potential
but can be enjoyed immediately.
Our delivery charges are based on the number of bottles in your order, and each case can hold 12 x 75cl bottles as shown in the table below smaller and larger bottles are pro rata. We do not have a minimum order requirement.
Subject to stock availability and successful payment authorisation, we aim to despatch your order the next working day after you place your order. Our Standard Delivery is a next day service for most of the mainland UK from date of despatch, and The Highlands and Islands areas are on a 2-3 day service normally. As most orders are delivered via our chosen courier company, we cannot offer guaranteed delivery times, however the vast majority of orders placed arrive on the next working day. During busy periods these delivery times may extend. IF YOUR ORDER IS TIME CRITICAL PLEASE RING THE OFFICE TO GET MORE UP TO DATE INFORMATION ON CURRENT DELIVERY TIME SCALES, AND WE WILL DO OUR BEST TO MEET YOUR REQUIREMENTS, BUT PLEASE NOTE WE ARE COURIER DEPENDENT ONCE THE ORDER LEAVES US, SO WE CANNOT ABSOLUTELY GUARANTEE A DELIVERY DATE.
We are able to hold your order if you would like to organise a day when you are going to be in, to do this just indicate it in the notes box provided in the delivery area of the order process. Please add any other specific delivery requirements in the same box and we will do our best to ensure they are followed, or alternatively call us on 01472 852118 and we will do our best to help you. Our chosen Couriers deliver Monday to Friday between 8.00 am & 6.00 pm.

Please note that all our consignments normally REQUIRE A SIGNATURE on receipt. We will NOT be able to leave your order without someone taking the order in, we cannot leave your order unattended in a porch or garage etc., unless we get written confirmation from you that this is acceptable and that you will take full responsibilty if the parcel goes missing. However we are able to leave it with a neighbour or at an alternative address where they can take the goods in, please indicate this in the box for notes on the delivery page of the order process, if this is a requirement. If no-one answers the door, the address will be carded in the normal manner you should contact the courier or us to get the delivery rescheduled.
Orders under £30 in value will incur a small order £10 carriage charge to standard none surcharged UK delivery areas.
